Teff is a grain used mostly in Africa, especially in Ethiopia where it is used to make a flatbread called Injera. The grain is extremely small, too small to husk, so Teff flour contains all of the good fiber and vitamins of the grain. In baked goods Teff provides a strong and sort of nutty taste, I like it. It is dark, and works very well in muffins.
