Double Chocolate Orange Torte

2 hours 28 min ago
This gluten free Double Chocolate Orange Torte will make a nice treat for Passover, which is rapidly approaching! My family, however, needed no holiday or excuse to devour the entire cake on a Sunday afternoon. This treat is easy to make and even easier to eat. Go ahead, try some and see for yourself. http://www.elanaspantry.com/double-chocolate-orange-torte/ -- posted by Elana's Pantry

Garlic Cherry-Tomato Kebabs

This is something I came up with when I needed a low-cal appetizer for a menu I was planning. I love the flavor of grilled tomatoes and the spices kick it up just enough. -- posted by Wrose458

Gluten- and Dairy-Free Chicken Enchiladas

Mon, 03/08/2010 - 06:29
For the food-allergic set; tasty even for the regular guy. My husband and four year old (who hates everything) really liked these, as did I. You can serve these with a side of grated cheese for those who are able to have it. This sounds a little odd when you are following the directions, but it turns out amazing, I promise. -- posted by Laura Meehan

Gluten Free Hearty Oatmeal Muffins

Mon, 03/08/2010 - 06:22
These muffins are not too sweet and absolutely delicious, low carb and high fiber because of all the oats. We eat them for breakfast, and pack them in our lunchbox. They are good with cheese and salad for lunch or with yogurt for breakfast. Even the gluten eating members of my family loved them. I found this recipe somewhere as an Oat Pan Bread and converted it to gluten free muffins, so thank you to the original poster. -- posted by Chef #1436194 Linda29609

Turkey Meatballs With Mushroom Gravy

Mon, 03/08/2010 - 05:56
This is a yummy, easy and healthy recipe born out of the need for something flavorful but within my "cleanse" diet guidelines. Though I used the 85/15 ground turkey, you can use the leaner, and save some fat calories. The mushroom gravy sits great on top of the meatballs which you can serve over brown rice, (how I ate it) or over egg noodles, (how my husband ate it). I think this would be a real treat with portabella mushrooms for the gravy, but didn't have them on hand. Hope you enjoy it! -- posted by Catfuzz

Cherry Coconut Easter Eggs (Gluten-Free)

Sat, 03/06/2010 - 22:22
Recipe from Nestle Australia website and also shown in March 2010 Australian Coeliac Magazine- featured as the cover recipe. I'm personally not a fan of Copha.....so wont be using it in my eggs. The photo on the site looks delicious - check it out on the link given below Use gluten-free ingredients if any variations are made to suit gf diet. Cooking time does not include refrigeration . This recipe uses Australian Metric measuring cups. 1 cup =250 mls. Recipe makes 36 larger or up to 50 smaller eggs. We make the smaller size as the eggs are very rcih for little tummies. http://www.nestle.com.au/nestlerecipe/recipe/Cherry-Coconut-Easter-Eggs-Recipe.aspx -- posted by **Jubes**

Butternut and Feta Risotto

Thu, 03/04/2010 - 06:37
A college friend of mine who moved to England recommended this, as it was her and her housemate's favorite. Very very good, and creamy. (Hint: it is generally easier to cut the butternut into rough slices, removing the seeds, then slice it more finely after it's cooked. Peeling and chopping raw butternut is rather difficult unless you have a very good knife.) -- posted by AllergyGirl

Chewy Sesame (Gluten-Free) Cookies

Wed, 03/03/2010 - 19:39
After going through lots of recipes calling for quinoa flakes, I finally decided to combine elements from several of them to create the chewy, melt-in-your-mouth cookie I wanted. A great alternative for kids with peanut, wheat, an/or dairy allergies, but feel free to sub the tahini for another nut or seed butter (peanut, almond, sunflower), though you may have to add some oil to obtain the same texture. You can also use cow, rice, or soy milk instead of the almond. -- posted by Génial Génie

Summer Squash Skillet

Tue, 03/02/2010 - 13:24
A delicious way to prepare all of those summer squash from your garden you don't know what to do with! We got this recipe from "Simply in Season", a Mennonite cookbook featuring recipes for every season of the year. We added chicken to make it a complete meal instead of a side dish. -- posted by AllergyGirl
