Raw Vegan Brownies
You will not believe these are actually good for you. Full of living enzymes and better than cooked brownies, these are a frequent treat for us! The beauty of this recipe is that it's so easy to whip up when you have a craving. I always double or triple it and throw some in the freezer. The coconut oil helps to keep the brownies from crumbling, and is a great way to get some in your diet, it's so good for you if you make sure to get virgin, unrefined, cold-pressed coconut oil. -- posted by RawFoodNut

Yellow Squash and Red Pepper Saute
This is my favorite way to have yellow squash. I have to fight my husband for it because he loves it, too. I am estimating all the amounts. I usually just toss mine together with whatever amounts of squash and red pepper I have. I love the bright red and yellow colors dancing in the pan! Sometimes I sprinkle a little balsamic vinegar at the end and let it caramelize on the squash....not as beautiful a color but quite tasty. -- posted by Kitchen Witch Steph

Gluten Free Open Faced Meatball Subs
This is an idea rather than a recipe. My lazy day, no inspiration dinner used to be Subway. Now that we're gluten free that's out and I found myself missing meatball subs. This dinner tasted exactly like a meatball sub except cheaper and just about as fast. -- posted by SWalker

Gluten Free 60% Whole Grain Hamburger Bun Recipe
I didn't actually do the math but these buns taste like the bread we used to comprise on. Healthy enough for Mom but still fluffy enough for the family to enjoy. This recipe was, as all successful multigrain bread recipes I've read have been, inspired by Heather Butt and Donna Washburn of 125 Best Gluten-Free Recipes. I freeze them as soon as they are cool and when I pull them out they are as good as new. If you are baking gluten free and haven't bought muffin top pans yet, I have to say, besides my mixer, they have been my best gluten free investment. -- posted by SWalker

Jalapeno Scalloped Zucchini Squash
This is a recipe that was invented with items I just happened to have on hand. It turned into something that I prepare and recommend to people often. It is delicious and SIMPLE!
Optional: top zucchini with crushed potato chips after first 25 minutes of baking, but before adding cheese.
NOTE: Recipezaar does not recognize Gandy's brand Jalapeno Dip, so it shows up as "jalapenos" but that is incorrect! You really need 6 T of the Gandy's sour cream based Jalapeno Dip! -- posted by Melanie2590

17 Bean Stew With Ham
This stew is very hearty. Great for when you have a large crowd. Add other vegetables as desired. The key to its flavor is a large amount of ham and the can of whole tomatoes. Do not add salt. The ham adds plenty! You can also make this with a thick ham slice. -- posted by DriveThruDodger

Quick Hungarian Goulash
I found this recipe in one of those cookbooks you can buy at the check out stand. I've altered it to fit my allergies and my family's tastes. The original recipe called for 1 lb of boneless beef sirloin cut into thin strips, but I actually prefer to use ground beef. Serving size is 1 1/4 cups. -- posted by LARavenscroft

Steak for Henry Jones (Rub/Marinade)
Have you heard of Henry Jones? They say save the bones for Henry Jones because Henry don't eat no meat. Well, I think Henry would love this so much that he would start eating his meat! It is the steak recipe I turn to over and over again because it offers EASY prep and tremendous flavor. Try this today, you will be thrilled with the results. You can use it on rib eyes, t-bones, porterhouses, and sirloins. I made a large batch of to keep on hand in a spice jar in the cupboard....even faster now! Creole Meatloaf (Gluten Free)
Very tasty, gluten free meatloaf using rice as the binder. Not sure where the recipe originated. If I am pressed for time, I will bake these in muffins tins instead of the loaf pan. Also, my family prefers the celery, onion and bell pepper be sauteed in a little broth or oil prior to adding to the meat. -- posted by Tamaretta

Pappasito's Pinto Bean Soup
I found this is a stack of old handwritten recipes. I probably copied it from the Houston Chronicle?? I have not made this at home yet, so serving size and prep time are a guess. Also, I personally would drain some of the bacon fat and add the salt to taste, but I am listing it how it was originally written. Please note these beans should soak for 8 hours, so plan ahead. -- posted by Tamaretta
